It is also a very popular pasta in other regions of Southern Italy. For Authentic "al dente" pasta, lightly salt pot of water and bring to a boil. Add pasta and stir occasionally. Test after 9 minutes for desired tenderness. If needed allow one more minute of cooking. Pasta should have a slight firmness when bitten.
